Dessert:-Lemon Mousse.


I cannot, I tell you ever remember a hot day, next to the pool, summer sun scorching us tan, whithout a scoop of Mousse.

Lemon Mousse.


Ingredients.

  1. 4 Tbsp Sugar.
  2. 4 Apricots, washed, stoned and diced.
  3. 4 Strawberries, washed and diced.
  4. 8 Pecan Nuts chopped.
  5. Pkt Lemon Jelly.
  6. 250ml Cream.
  7. 1 Cup boiling water.
  8. 2 ice cubes,
  9. 2 Tbsp Butter or Marg.
  10. A few mint leaves chopped.

Method.

  1. Melt butter and sugar in a frying pan over low heat.
  2. Once sugar is dissolved add fruit to pan, fry for 4 min.
  3. Add boiling water to jelly, stir to dissolve, add half the cream, and both ice cubes, stir.
  4. Tip in fruit, nuts and mint leaves, stir.
  5. Refrigerate until set.
  6. Whip remaining cream to decorate once set.
