I cannot, I tell you ever remember a hot day, next to the pool, summer sun scorching us tan, whithout a scoop of Mousse.
Lemon Mousse.
Ingredients.
- 4 Tbsp Sugar.
- 4 Apricots, washed, stoned and diced.
- 4 Strawberries, washed and diced.
- 8 Pecan Nuts chopped.
- Pkt Lemon Jelly.
- 250ml Cream.
- 1 Cup boiling water.
- 2 ice cubes,
- 2 Tbsp Butter or Marg.
- A few mint leaves chopped.
Method.
- Melt butter and sugar in a frying pan over low heat.
- Once sugar is dissolved add fruit to pan, fry for 4 min.
- Add boiling water to jelly, stir to dissolve, add half the cream, and both ice cubes, stir.
- Tip in fruit, nuts and mint leaves, stir.
- Refrigerate until set.
- Whip remaining cream to decorate once set.
